Strawberry Vanilla 4 ingredient, 5 minute Ice Cream

After the success of my Really Easy Victoria Sponge, the second recipe I've tried in the Duerr's 'Baking For Boys' series is Strawberry Vanilla Ice Cream.

I've never made ice cream before, I always thought it was incredibly hard, time-consuming and complicated....apparently not! It took us 5 minutes to make this and it only has 4 ingredients. Bob it in the freezer and come back to it 3 hours later. Job's a goodun.

Their tip about covering it with cling film while it sets certainly worked well. I had a tiny bit of ice on the top surface of my ice cream, but none throughout.


 The ice cream is incredibly soft and easy to scoop.




And the verdict?


Oh my. I've been missing out. This is amazing. The taste is one that you rarely find anywhere and only usually get with incredibly expensive ice cream. The Duerr's jam gives a perfect flavour that is really full of strawberries, but doesn't completely overpower the vanilla. It's absolutely delicious and immediately I started looking at everything else in my cupboard to see what other flavours I can make. I can't believe it was that easy. I can't believe I missed out all this time!

I've got Raspberry jam ice cream setting in the freezer for tea......

  4. Wow! This looks delish! My daughter cannot eat dairy which is a real shame or I would be making this right now! I am always looking for dairy-free ice cream recipes so if you know of any then send them my way!!!

If she's okay with Soya then Soya-Too and Soja-Saane can be whipped apparently, and dairy free 'Dream' products can also apparently be made into ice cream - although it's not good if it defrosts before you eat it because it separates. If you give it a go and it works please post a photo, I'd love to see it!
